Arroz con leche is pure nostalgia for so many of us.
Warm, creamy, sweet… but usually loaded with dairy and lots of sugar that can create major glucose spikes.
So today, we’re keeping all the sabor and comfort, but giving it a plant-based, fiber-friendly twist.
By using dates and flax, you add natural sweetness, minerals, and fiber that help slow glucose absorption, making this dessert much kinder to your blood sugar.
You can still enjoy your childhood favorites… just with ingredients that support your wellness goals. 💚
PLANT-BASED ARROZ CON LECHE (FIBER-FRIENDLY VERSION)
Ingredients
2 cups white rice
4 cups water
2 cinnamon sticks
1 can dairy-free evaporated milk
1 can dairy-free condensed milk
1–1.5 cups organic soy milk (adjust consistency)
6–8 medjool dates, chopped
1–2 tbsp ground flaxseed (optional but recommended!)
Ground cinnamon for serving
Optional: maple syrup to adjust sweetness
1. Cook the rice:
Add the 2 cups rice, 4 cups water, and cinnamon sticks to your Instant Pot.
Set to “Rice” (10 minutes). Allow natural release for 5–10 minutes.
2. Remove cinnamon sticks and fluff the rice.
3. Add the milks:
Pour in the dairy-free evaporated milk
Add the dairy-free condensed milk
Add soy milk to reach your desired creaminess
4. Sweeten naturally:
Stir in the chopped dates so they soften and melt into the mixture.
Taste and add maple syrup only if needed.
5. Boost the fiber:
Add 1–2 tbsp ground flax. Mix well.
6. Simmer on low heat for 5–10 minutes until thick, creamy, and dreamy.
Add more soy milk if needed.
7. Serve warm with a sprinkle of cinnamon on top.
Enjoy immediately or refrigerate — it gets even creamier.
