Pumpkin Protein Muffins
Ingredients
2 cups (240 g) all-purpose flour
1 ½ tsp baking soda
2 tsp cinnamon
½ tsp nutmeg
½ tsp sea salt
¼ cup (25 g) Horchata Protein (or Vanilla Chai protein) https://link.sharepurium.com/LNYI
15 oz (425 g) pumpkin purée (not pumpkin pie filling)
¾ cup organic brown sugar
½ cup avocado oil
2 tsp vanilla extract
½ cup dairy-free chocolate chips
Instructions
1. Preheat oven to 375°F (190°C). Line or grease 14 muffin cups.
2. In one bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and protein powder.
3. In another bowl, whisk pumpkin, brown sugar, oil, and vanilla until smooth.
4. Gently fold dry mixture into wet until just combined. Stir in chocolate chips.
5. Divide batter evenly into muffin cups.
6. Bake 18 minutes, or until a toothpick comes out clean. Let cool before serving.
