Fiber-First Tex-Mex Salad

Tex-Mex Salad with Creamy Chipotle Dressing


Looking for a meal that's packed with flavor, loaded with plants, and perfect for a hot summer day?


This Tex-Mex Salad is one of my favorites because it's simple to make, colorful, satisfying, and naturally rich in fiber. It's proof that salads don't have to be boring!


Salad Ingredients


- 1 container mixed greens

- 1 can black beans, rinsed and drained

- 1 cup organic roasted corn

- 1 cucumber, diced

- 1 cup cherry tomatoes, halved

- 1 avocado, diced

-Onion, red

- ¼ cup fresh cilantro, chopped

- ¼ cup pumpkin seeds


Creamy Chipotle Dressing


- ½ cup raw cashews

- Chipotle peppers (adjust to your preferred spice level)

- 1 tablespoon apple cider vinegar

- 2 garlic cloves

- ½ teaspoon garlic powder

- Salt and pepper to taste

- Water as needed to reach desired consistency


Instructions


1. Add all salad ingredients to a large bowl.

2. Place all dressing ingredients in a blender.

3. Blend until smooth and creamy, adding water slowly until you reach your preferred consistency.

4. Pour dressing over the salad and toss gently.

5. Serve immediately and enjoy!


Christina's Tip


One thing you'll notice around here is that I'm always encouraging people to eat more of the foods they may be avoiding.


Most of us could benefit from more plants, more fiber, and more color on our plates.


This salad is a delicious place to start. 🌿
