Planta Paella

My Planta Paella (Inspired by the Spanish Classic)

If you've been looking for a comforting, colorful, one-pan meal, this recipe is for you.


While this isn't a traditional paella, it's my plant-forward version made with ingredients I already had on hand, and it turned out absolutely delicious. In fact, it may be one of my favorite rice dishes I've ever made!


Ingredients

• 1 package Field Roast plant-based sausage, sliced • 1 white onion, diced • 4–6 garlic cloves, minced • 1 red bell pepper, sliced • 1 orange bell pepper, sliced • Green beans •mushrooms •artichocks •tablespoons vegetable bouillon • Salt to taste • 4 cups water • 2 cups rice • A generous pinch of saffron • Fresh greens (optional) • Lemon wedges for serving


Directions

Heat a large skillet over medium heat.


Brown the sliced Field Roast sausage on both sides.


Remove and set aside.


In the same pan, sauté the onion, garlic, and peppers until softened.


Add the green beans and vegetable bouillon.

Pour in the water.


Once the liquid is hot, sprinkle the rice evenly into the pan. (Avoid stirring too much, this helps the rice cook properly.)


Add the saffron and a little salt if needed.


Cover and cook over low heat for about 15 minutes, or until the rice is tender and the liquid has been absorbed.


Top with the sausage, fresh greens if desired, and serve with fresh lemon wedges.
