Creamy One-Pot Potato & Broccoli Soup

This easy soup came straight from Pink Petal Cafe by Oli. It’s one of those recipes that reminds us that homemade food doesn’t have to be complicated. Potatoes and carrots create the creamy base, broccoli adds color and goodness, and nutritional yeast gives it a delicious savory flavor.
Perfect for a quick lunch or cozy dinner!
Ingredients
4 medium potatoes, peeled or unpeeled and chopped
2 medium carrots, chopped
3 cups broccoli florets
¼ cup nutritional yeast
4 cups vegetable broth or water, plus more as needed
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika, optional
½ teaspoon black pepper
Salt to taste
Optional Toppings
Croutons
Baked or air-fried tofu cubes for added plant-based protein
Hemp seeds
Fresh herbs
Extra nutritional yeast
Directions
Add the chopped potatoes, carrots, vegetable broth, nutritional yeast, garlic powder, onion powder, pepper, and salt to a large pot.
Bring to a boil, then reduce the heat and simmer for about 15–20 minutes, or until the potatoes and carrots are fork-tender.
Add the broccoli and cook for another 4–5 minutes, just until tender and bright green.
Using an immersion blender, carefully blend the soup directly in the pot until it reaches your desired consistency. We like it creamy while still leaving a little texture.
If the soup is too thick, add a splash of vegetable broth or water until it's just right. Taste and adjust the seasonings as needed.
Serve warm with your favorite toppings.
Oli already decided that next time, croutons are a must! 😂 For a more filling meal, I love the idea of adding crispy baked tofu on top for some extra plant-based protein.
