Albóndigas Soup

Ingredients:
1 yellow onion, chopped
3 garlic cloves, minced
2 celery stalks, diced
4 large carrots, diced
1/4 cup crushed tomatoes
1 tablespoon vegetable bouillon
4 yellow potatoes, diced
1 tablespoon no-salt seasoning (Costco or any all-purpose seasoning)
2 packages Beyond Meatballs (or Beyond Sausage, cut into pieces)
5-6 cups of water (adjust for desired consistency)
Instructions:
1. Set your Instant Pot to sauté mode. Add the chopped onion, garlic, celery, and carrots. Sauté until softened, about 5 minutes.
2. Stir in the crushed tomatoes and vegetable bouillon.
3. Add the no-salt seasoning for a balanced flavor.
4. Add 2 packages of Beyond Meatballs and diced potatoes, and 5-6 cups of water.
5. Close the lid, set the Instant Pot to high pressure, and cook for 5 minutes.
6. Once done, quick-release the pressure, give it a good stir, and your vegan Albondiga soup is ready to enjoy!
