Coctel de Palma (Hearts of Palm “Seafood” Cocktail)

A Mexican favorite in our household, light, fresh, and full of flavor and FIBER! With just a few simple swaps, this plant-based version keeps all the goodness and nourishment. Perfect for warm days or an easy family dinner. If you make it, tag me @plantatu_lifestyle so I can see your version!

Ingredients (serves 4–6)


2 cans hearts of palm, sliced


2 large bottles vegetable juice, no added sugar. (found at Sprouts)


2 Roma tomatoes, finely chopped


½ red onion, finely chopped


2 celery stalks, finely chopped


1–2 jalapeños, finely chopped (optional for spice)


½ bunch cilantro, chopped


2 avocados, diced


Sea salt and pepper, to taste


Good-ingredient crackers, for serving

Instructions


1. Finely chop all ingredients and combine everything in a large bowl.



2. Season with salt and pepper to taste.



3. Chill if you’d like it extra refreshing.



4. Serve with crackers on the side and enjoy!
