Ingredients (serves 4–6)
2 cans hearts of palm, sliced
2 large bottles vegetable juice, no added sugar. (found at Sprouts)
2 Roma tomatoes, finely chopped
½ red onion, finely chopped
2 celery stalks, finely chopped
1–2 jalapeños, finely chopped (optional for spice)
½ bunch cilantro, chopped
2 avocados, diced
Sea salt and pepper, to taste
Good-ingredient crackers, for serving

Instructions
1. Finely chop all ingredients and combine everything in a large bowl.
2. Season with salt and pepper to taste.
3. Chill if you’d like it extra refreshing.
4. Serve with crackers on the side and enjoy!
