Ingredients


Base


1 shallot or ½ onion, diced


3 garlic cloves, minced


2 celery stalks, chopped


2 carrots, chopped


1–2 tbsp olive oil (or water sauté)


2 cans young jackfruit (drained + rinsed)


1 heaping tbsp veggie bouillon base


4–5 cups water (adjust for thickness)


1 package gnocchi


2 big handfuls of kale, chopped



Creamy Cashew “Crema”


1 cup unsweetened almond milk


¼–½ cup cashews


1 tbsp vinegar (white or apple cider)


Instructions


1. Sauté the aromatics

In a large pot, sauté shallot/onion, garlic, celery, and carrots until softened.



2. Add jackfruit + broth

Add the young jackfruit, bouillon, and water.

Simmer for 10–12 minutes.



3. Make the crema

Blend almond milk, cashews, and vinegar until completely smooth.



4. Add gnocchi

Stir in gnocchi and let it cook according to the package (usually 2–3 minutes).



5. Make it creamy

Pour in the cashew crema and mix well. Simmer on low until the soup thickens slightly.



6. Add greens

Toss in the kale right at the end so it stays vibrant.



7. Serve warm

Taste and adjust seasoning. Enjoy!


Tips


For extra protein: add white beans or blend tofu into your crema.


For deeper flavor: add thyme, smoked paprika, or nutritional yeast.


For more fiber: add mushrooms, zucchini, or spinach.
