Vegan Tinga with King Oyster Mushrooms + Jackfruit

Ingredients

  • 14 oz canned tomatoes or 5 fresh tomatoes

  • Chipotle in adobo, to taste (add as much heat as you like)

  • ¼ onion

  • 3 garlic cloves

  • Salt, to taste

  • 2–3 king oyster mushrooms, shredded

  • 2 cans young jackfruit (in water), rinsed and shredded

  • Tostadas

Optional toppings: cilantro, kale, vegan feta, avocado, radish, lime.

Instructions

  1. Blend the tomatoes, chipotle, onion, garlic, and salt until smooth.

  2. In a large pan, add the shredded king oyster mushrooms and jackfruit. Sauté for 2–3 minutes.

  3. Pour the sauce over the mixture and let it simmer over medium heat for about 5 minutes, or until slightly thickened.

  4. Serve on tostadas and add your favorite toppings.
