Broccoli Slaw Cold Salad (crowd favorite)

This isn't your average lettuce salad—it's a refreshing, creamy, crunchy, and sweet combo that surprises everyone with its flavor. I made this live with my little one, and it’s now a favorite in our home! It’s packed with nourishing ingredients and tossed in a tangy, slightly sweet, dairy-free dressing that’s both satisfying and refreshing. Great for parties, BBQs, or as a colorful side for your weekly meals!

🥦 Broccoli Slaw Cold Salad Recipe

Salad Ingredients:

  • 1 small head of broccoli, chopped small or shredded

  • 1 cup shredded carrots

  • 1/2 cup chopped dates (or to taste)

  • 1 cup cotton candy grapes, halved

  • Vegan feta

🥣 Creamy Tangy Dressing:

  • 1/2 cup non-dairy milk (I used organic soy milk)

  • 1 tbsp apple cider vinegar

  • 1/3 cup Dijon mustard

  • Maple syrup to taste (start with 1 tbsp and adjust)

  • Black pepper to taste

  • 1/3 cup vegan mayo

  • 1/3 cup raw cashews (soaked for easier blending, if needed)

Instructions:

  1. Blend all dressing ingredients until creamy and smooth. Taste and adjust sweetness, mustard, or pepper to your liking.

  2. Toss the broccoli, carrots, dates, feta, and grapes in a large bowl.

  3. Pour dressing over the salad and mix well until everything is coated.

  4. Chill in the fridge for 20–30 minutes before serving for best flavor.


Tip: This salad holds up great in the fridge and tastes even better the next day!
