Vegan Brisket Sandwiches

Ingredients
1 block Beyond plant-based ground
2 cans young jackfruit in water or brine, drained and shredded
Mexican BBQ seasoning (generous amount)
1 tsp liquid smoke
BBQ sauce of choice
Burger buns
Homemade coleslaw
Instructions
Preheat oven to 375°F.
Drain and shred the young jackfruit.
In a bowl combine the Beyond ground, shredded jackfruit, Mexican BBQ seasoning, and liquid smoke.
Mix well and form into a brisket-style loaf.
Place on a lined baking tray and bake for 1 hour.
Remove from oven, brush generously with BBQ sauce, and bake another 15 minutes.
Slice or shred slightly and serve on buns with homemade coleslaw.
