Vegan Brisket Sandwiches


Ingredients

  • 1 block Beyond plant-based ground

  • 2 cans young jackfruit in water or brine, drained and shredded

  • Mexican BBQ seasoning (generous amount)

  • 1 tsp liquid smoke

  • BBQ sauce of choice

  • Burger buns

  • Homemade coleslaw


Instructions

  1. Preheat oven to 375°F.

  2. Drain and shred the young jackfruit.

  3. In a bowl combine the Beyond ground, shredded jackfruit, Mexican BBQ seasoning, and liquid smoke.

  4. Mix well and form into a brisket-style loaf.

  5. Place on a lined baking tray and bake for 1 hour.

  6. Remove from oven, brush generously with BBQ sauce, and bake another 15 minutes.

  7. Slice or shred slightly and serve on buns with homemade coleslaw.
