Dairy-Free Creamy Alfredo Pasta (Vegan + Protein-Packed)

This quick and creamy Alfredo pasta is a go-to in our home! It’s dairy-free, rich in plant-based protein and fiber, and perfect for busy days when you want something nourishing but fast.
Ingredients
2 cups unsweetened soy milk (or any plant milk of choice)
2 tbsp apple cider vinegar
1/4 cup hemp seeds
2 small hummus cups (about 1/3–1/2 cup total)
1 tsp garlic powder (or 1–2 garlic cloves, sautéed)
Salt and black pepper to taste
2–3 cups cooked pasta of choice (regular, gluten-free, lentil, etc.)
1–2 cups steamed or sautéed broccoli (optional but highly recommended)

Instructions
1. Cook pasta according to package instructions. Steam or sauté broccoli if using.
2. While pasta cooks, blend the sauce:
In a blender, combine soy milk, apple cider vinegar, hemp seeds, hummus, garlic powder (or fresh), salt, and pepper. Blend until creamy and smooth.
3. Heat the sauce: Pour blended sauce into a saucepan and warm over medium heat, stirring occasionally until slightly thickened.
4. Combine: Toss cooked pasta and broccoli with the warm Alfredo sauce. Mix well to coat.
5. Serve and enjoy! Top with fresh cracked pepper or nutritional yeast if you like.
